Tortilla Soup...with chicken this time. IS ANYBODY GOING TO JOIN ME!?

Did anyone hear my cry for help!?  I thought I sounded desperate enough...pathetic enough... NO?  Please, please help me test TORTILLA SOUP!  I'm on a quest...but I know that I can't taste them all.  I'm gonna try...but you know the possibilities are endless.  I only have 3 links attached to my post where I announced my quest and one of those is mine. Soon there'll be 4 since I'm gonna add this one, too ;).
This recipe I found in the back of June 2010's Food Network magazine...it was the Tortilla Soup served at BESO, the restaurant owned by Eva Longoria Parker and Chef Todd English.  It was good...and included chicken...which if you've been following along, you'll notice this is my first Tortilla Soup recipe that includes actual chicken.  Although the recipe called for grilled & sliced, I actually just poached and shredded it..."I do what I want ;P!" 
Tortilla Soup
recipe from Eva Longoria Parker via Food Network Magazine June '10
serves: 4-6

3 dried mulato or ancho chile peppers
1 Tbs. extra-virgin olive oil
1 onion, sliced
3 cloves garlic, smashed
1 28-oz. can plum tomatoes
1 Tbs. coriander seeds
1 tsp. ground cumin
8 c. low-sodium chicken broth
2 bay leaves
4 sprigs fresh thyme
I also used some crumbled Mexican Oregano
kosher salt
1-2 grilled chicken breasts, sliced I used poached & shredded
~1 c. crumbled queso fresco
1 avocado, diced
fresh cilantro
4 corn tortillas, cut into strips and fried
1-2 Tbs. sour cream

1. Remove stems and seeds from the chiles.  Place in bowl, cover w hot water and soak until soft, ~20 minutes.  Drain the chiles, transfer to blender and process to make smooth purée.

2. Heat oil in large pot over medium, then add onion and garlic and cook until onion is transluscent.  Add tomatoes w/ their juice, 1/4 c. chile purée, the coriander seeds and cumin and cook ~5 mins.  Strain broth through strainer into another pot, discarding the solids.  Season w/ salt.

3. Place a small amount of chicken, queso, avocado, cilantro, tortilla strips and sour cream in each bowl, then pour ~1 c. hot broth around garnishes.

  2. Funny that you posted this today. Just yesterday I found three tortilla soup recipes that I wanted to try. I was thinking of picking two of the recipes and doing a throwdown.
    I saw this article and was curious about Eva's food. It looks great and I do like that it has chicken in it.

  7. When I saw the recipe in the FN magazine I wondered if you were going to make it. It sounds (and looks!) good. I am bummed I made my latest tortilla sop for Bittman right before you started your quest, but I will try to find a recipe or two and jump in. ;-)

  9. okay, so the other night i started a batch of tortilla soup with you in mind. but then i had to take off and trustingly left the soup in the hands of my hubby. yeeeah, that didn't work out, so i'm going to try again because i love tortilla soup and i really want to participate!

    this looks awesome!

    great tortilla soup, I would love some but wow here in Texas it's HOT!! I saw that recipe in the mag, and wondered how it would taste, great post..maybe I should dig through my recipes

  11. I may have to try a chicken stock (no meat) version of this, unless I put it on the calendar for three weeks from now, since all I have seen the past week are lots of delish foods like this one. Have a bite for me :) Send some tortilla soup love my way...
