Independence (Day) Popsicles - Happy 4th of July!

Cool, blue swimming pools. Hot, sandy beaches.  Cook-outs.  Drippy, sticky ice cream and popsicles.  Family and friends and tan kids darting through yards and cannon-balling into the water.  Blankets spread out on hilltops.  Lawn chairs.  Music.  Mosquitos and ants.  Sweating.  Smiling.  Bonfires and campfires.  Sunscreen and bugspray.  Cold beer.  Corn on the cob.  Chasing fireflies.  Red, white, and blue.  Glow necklaces and bracelets.  Crazy lit-up roses and fans and mouth-magnets.  Loud, bright, colorful, glorious FIREWORKS!  Freedom.

Yes, I realize that the colors of our flag are not red, white, and purple.  Everytime I think that maybe, juuuuust maybe, those blueberries won't change colors when I purée them...I get a smack of reality.
makes ~8-10 (depending on size of popsicle mold)

~1 pint strawberries
~1 c. coconut milk
~½ pint blueberries
juice from ~½ lemon
NuNaturals Vanilla Stevia liquid drops, to taste

first layer:  Purée strawberries in a blender until smooth.  If  your strawberries are super sweet, leave as-is.  If not, add a drop of two of Vanilla Stevia until sweet enough.  Remember, cold dulls the taste buds, so you need to make sure to add it if it needs it, or it won't taste like anything.  Pour into the bottom third of your popsicle mold and freeze until set all the way (1-2 hours).

second layer: Combine coconut milk with Vanilla Stevia until sweet enough, then fill another third of your popsicle mold and stick back in the freezer for another hour or two, until hard.

third layer:  Purée blueberries with lemon juice and a Vanilla Stevia to taste in blender. Pour into final third of popsicle molds.  Add sticks (or put on lids...again, depends on your mold/method for popsicles).  Freeze until hard.  Enjoy!
Happy Independence Day, USA!
Wishing everybody a safe and happy 4th of July!
