Game Day Dipping w/ Cheesy Spinach and Bacon Dip

My madness turned to sadness last Sunday when my boys in green and white didn't advance. I'm a die-hard Spartans fan and had them picked to go all the way! I don't do brackets, but if I did, mine would have been busted. Which is exactly the reason that I stopped filling them out. I feel like a fair-weather fan if I don't pick "my boys" to go all the way. I always have them pegged to win it all. That makes for a really bad game-face.

I was bummed for the rest of the day. I even threw up my hands and proclaimed that I wasn't watching anymore of the tournament. No more college basketball for this girl until next season. And then I got over it. There's just something about the excitement that draws me back in. And if my team is no longer there, my barrage of cheers and support go to any Big 10 teams that remain. Fortunately, there's still one in there.

The one remotely good thing about not having my favorite team on the court anymore is that I can now focus on the food. Game-day food...the other equally important part of any sporting event! With only four games remaining, what will you be bringing to the (coffee-) table?

Cheesy Spinach and Bacon Dip
I've mentioned before that I have a bit of a thing for dips. Give me a table full of all different varieties of dips, a bunch of dipping options (from crackers to chips to veggies to fruits to meats and cheeses), and I may not leave until my belly is on par with the basketball that brought everyone together.

I found this Cheesy Spinach and Bacon Dip over at the Sam's Club website, where you can find affordable ingredients (such as the Velveeta Cheese & Rotel) used in the dip and other tasty recipes to add to your game day parties. Of course there's the classic Queso Dip, but you will also find nachos, quesadillas, and another thing that will be showing up on a game-day table very soon, Spicy Cheeseburger Dip!

Cheesy Spinach and Bacon Dip

Ingredients (serves 32)
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 pound VELVEETA®, cut into 1/2-inch cubes
  • 4 ounces cream cheese, cubed
  • 1 (10 ounce) can ROTEL® Diced Tomatoes & Green Chilies, undrained
  • 8 slices cooked bacon, crumbled

Instructions
Put everything into a large microwave-safe bowl (set aside the bacon if you wish). Microwave on high for 5 minutes, or until VELVEETA® is completely melted. Stir with a heatproof rubber spatula, return to microwave in 30 seconds intervals, if necessary. Once the mixture is hot and smooth, transfer to a serving bowl (stir in bacon first if you set it aside). Set out chips, crackers, and veggies for scooping up the cheesy deliciousness!
