"I Feel Like Such a Heifer" Marshmallow Squares | Clueless #FoodnFlix #JaneAustenBites
I had a lot of fun flashing back to the mid-90's flick Clueless for Food 'n Flix this month. Clueless is a modern day (well, modern as compared with the original) retelling of the Jane Austen classic, Emma.

  • Cher = Emma
  • Josh = Mr. Knightly
  • Tai = Harriet
  • Elton = Mr. Elton
  • Travis = Robert Martin
  • Christian = Frank Churchill
  • Amber = Jane

While Cher may be "high society" (aka, daddy is rich), she's not your typical snob - she actually fancies herself a matchmaker (Emma!), donates to those who have less than she does, and generally tries to bring more good to the world. Sure, she's a bit flighty and self-absorbed, but her sunny demeanor and do-good attitude pushes those less than savory qualities to the backburner.

When new girl, Tai, comes to town, she tries to force her and Elton together (Harriet and Mr. Elton), while the whole time Elton actually digs Cher...and Tai and Travis (the farmer, Robert Martin) are obviously meant to be together. In the meantime, Cher falls for the handsome, mysterious part-time resident, Christian (Frank Churchill), and goes through a bit of confusion and heartbreak before realizing that she's actually in love with Josh (her Mr. Knightly).

It's all in fun, and filled with outfits and large hats fit for ladies of high society. And believe it or not, there's actually a good deal of food throughout - most of which leading to some good quotes:

  • "Whenever a boy comes, you should always have something baking. When boys aren't thinking about sex, they're thinking about food. Just like sex, thinking about food makes boys happy. It's nice to make the boy happy when you invite him over."
  • "Let's blow off seventh and eighth, go to the mall, have a calorie fest, and see the new Christian Slater."

And what's probably my favorite, because it's so ridiculous and makes me laugh every time (and it's the inspiration behind my Clueless inspired recipe)...

I feel like such a heifer. I had two bowls of Special K, 3 pieces of turkey bacon, a handful of popcorn, 5 peanut butter M&M's and, like, 3 pieces of licorice.

Yield: 16 large squares

"I Feel Like Such a Heifer" Marshmallow Squares

prep time: 31 MINScook time: 5 MINStotal time: 36 mins
These Clueless-inspired marshmallow squares are loaded with all of Cher's guilty treats: Special K cereal, popcorn, turkey bacon, peanut butter M&M's, and licorice.

ingredients:

  • 4 cups Special K cereal
  • 2 cups popped popcorn
  • 6 slices turkey bacon, cooked crisp and roughly chopped
  • 1/2 cup Peanut Butter M&M's
  • 1/2 cup licorice bites
  • 4 ounces (1 stick, 1/2 cup) salted butter
  • 8 cups (~13.5 ounces) mini marshmallows

instructions:

  1. Line an 8-inch square baking pan with parchment or wax paper and grease it lightly. Combine cereal, popcorn, turkey bacon, m&m's, and licorice in a large bowl; set aside.
  2. Place the butter in a large non-stick pot over low heat until melted. Add the marshmallows and cook, stirring constantly, until they are completely melted.
  3. Dump the remaining ingredients into the pot and gently stir until they are entirely coated in marshmallow. Scoop into prepared pan and use a greased heat-safe rubber spatula or greased hands to press down into an even, compact layer.
  4. Allow to cool at room temperature for at least 30 minutes before cutting into squares and chowing down!
