Lately... {5.9.12}

...I've been loving this cookbook.  Current favorite.  It's one of those I checked out from the library and then immediately ordered from Amazon.

...my hold on this book finally came through at the library.  I need to finish it and two that follow before the other two movies come out.  My son read them when they first came out.  I wish I'd followed suit sooner.

...the whole family saw this movie over opening weekend.  Loved it - it was so fun!  Finally a good Hulk.

...I bawled my eyes out while my heart broke for Channing Tatum's character in this movie.  And why is Rachel McAdams so stinking cute?

...I'm eating avocado fries dipped in anything I can get my hands on.  Yup. Still using and enjoying this cookbook.

Lately... {5.1.12}

...I've been slightly obsessed with Simply Lemonade with Mango.  Seriously.  I can't even keep any around long enough to snap a photo or figure out something fun to do with it. It's too good.  Like, ridiculously.

...I've been reading the latest books from some of the series that I adore.  The first being Buried in Buttercream (a Savannah Reid mystery from G.A. McKevett).  And the second one which I just finished being Dolled Up for Murder (A Josie Prescott Antiques mystery from Jane K. Cleland).  And I'm extremely antsy for the library to open today so that I can pick-up the new Sookie Stackhouse book Deadlocked.  Sookie!

...I've found myself getting addicted to a few of the great new t.v. series from this past season.  My fast-favorites were New Girl, Revenge, and Grimm.  Why yes, I do have very eclectic tastes...why do you ask?

...I have a new obsession.  It goes by the name of Baby Arugula.  Small...tender...peppery and reminiscent of mustard greens.  How I love thee.  It all started with this salad, by the way. How else have I used it, you ask? Well.  I'm gonna go ahead and get real for a minute and admit that I almost always have a few frozen pizzas in the freezer.  Sometimes I just want easy.  But the great thing about that is dressing them up.  Oh yes.  Get a cheese pizza and before you slide it into the oven, add some roasted garlic cloves, some artichoke hearts, and some salami....once you pull it out, put a big ol' handful of baby arugula on top, drizzle it with a dash of olive oil, and sprinkle on some dried chile flakes and oregano.  That's the stuff, baby.
Plus, I've also been throwing it into pretty much any kind of sandwich you can imagine.  I'll be sharing one such sammich soon.  Plus, it goes fantastic with grains...which I'll be sharing in a guest post coming up towards the end of next week.  I'll give a heads up.

...I've also been contemplating getting a dog.  I mean, I like dogs...but I'm a cat person.  But I know the kids want a dog.  I think I was just scarred by having to scoop so much poo as a kid.  Tiny folding shovels hurling...ahem...projectiles over the fence and down the hill across an alley may or may not come to mind.  Anyhoo.  Bulldog.  Pug.  Something along those lines.   I'm sure I'll be wavering on that for quite some time.  You know...it mostly comes down to "potty training". Don't know if I'm ready for that.

...I tried Biscoff for the first time.  It was odd.  And addictive.  And I enjoyed it.  I even used it to make a Malted Biscoff Banana Milkshake.  But now that my jar is empty, I won't be rushing out to buy another one.  I kinda got over it.

...I've made some things that I know I'm not going to get around to blogging.  BUT.  Since they've already been blogged other places, I can still lead you to the recipes.  One was this Beer BBQ Chicken of the crockpot variety.
And another were these Chewy Chocolate Chip Cookies of the "made with coconut oil" variety.

Tacos, Enchiladas, Tostadas y Mas! {mish-mosh}

Well, as threatened promised, I have another big ol' batch of mish-mosh coming your way today.  This should be it for a while, though.  My photo files are pretty much purged now...and this post is packed with tons of flavors that I adore.

Let's start with tacos.  Always a good jumping point if I do say so myself.  And I just did.  The hubs and I ate these tacos on the morning the kids went back to school.  Last year.  Zoinks!  The only reason I know that is because the folder they were in was labeled "first day of school tacos".  They had black beans and chorizo topped with a salsa that I made with a bunch of heirloom tomatoes from my garden.  Pretty...yes?  Let's not forget about those big crumbles of queso fresco.  I love starting the day with tacos.

This was a great afternoon snack...or maybe it was lunch?  The Master aka Rick Bayless inspired me to have a guac party (didn't take much pushing) that included this batch of Mango Guacamole and some chips that were still warm.  You can find the recipe in Fiesta at Rick's.

Oh yeah, look at this pan of Enchiladas Rojas.  I had three more pans just like it!  They look pretty tasty, right?  Well, they were not.  And it pains me to say that.  The recipe comes from Eva Longoria's cookbook, Eva's Kitchen.  I had high hopes.  They were made in the traditional way...the same way we make them at home.  Mexi taught me right.  It was just that they had no flavor.  I kind of wondered since there wasn't any seasoning-type agents added.  Heck, I even threw in salt and cumin...but I should have had a heavier hand.  I hated to put it "out there" that they weren't so good, but I wanted to give fair warning in case anybody else decides to make some- season, Season, SEASON...and well.  We ate them anyway and added extra salt and salsa, but....meh.

How's about we move from not-so-great enchiladas to a pan of KILLER ENCHILADAS ROJAS.  Made by Mexi...the hubs...mi esposo...of course!  Maybe I'm biased, but my significant other's enchiladas are the bomb.  Another breakfast that made the day a few shades brighter.  Plus, he knows just how I like them.  Keep the pesky fillings (like chicken) out of my enchiladas.  Fry, dip, roll and smother in the good stuff!  It's true, I don't like things inside my enchilada.  Unless it's just cheese.  Pssst.  Duh.

These came about one day after I sat down to watch the tele and caught an old episode of Rachael Ray.  I think it may have been 30 Minute Meals...not positive.  You know how she "enhances" boxed mixes and things sometimes?  Well, that's what she did with a box of corn muffin mix.  When the episode ended, I promptly went into the kitchen and grabbed the box of Jiffy Corn Muffin mix I knew was in the pantry.  I cooked up some bacon and crumbled it...snipped in some chives, threw in some smoked paprika, and some extra sharp cheddar.  I didn't use her exact recipe, because I was doing it by memory, but after typing in a search, I think it was these Corn Muffins with Bacon and Cheddar.  Worth it!

I'm pretty sure that I made these Molletes waaaaay back when I made some bolillos with crunchy bits of cornmeal in them.  Doesn't get much simpler or more satisfying that hollowed out bread heaped high with refried beans, queso fresco, and salsa that is then baked until warm.

Okay, this Smoky Sweet Potato Potato Salad was pretty killer, as well.  If you read Food Network Magazine, you've seen those little inserts each month that give you "50 different somethings".  Well, a couple of months ago, it was potato salad.  Each and every one looked so delicious that I was tempted to give myself a challenge of making every kind.  But then reality set in and I realized I didn't have time for that.  So, the thick slices of sweet potato tossed with a mayo spiked with chipotle, scallions, and cilantro had to carry me through.  And it did.  I still think about it.  Often.

Okay, if you haven't guessed by now, whenever hubby is off work and I "don't feel like" cooking breakfast, I ask him to do it.  And in case you also haven't guessed, it's because when he does, he gives me plates heaped with mouthwatering, nose-tingling Mexican vittles.  Like these Black Bean & Chorizo Tostadas.  Chunks of avocado and queso fresco...cilantro...salsa verde and sour cream...need I say more?

In true slacker form, I bring you an adventure from last month over at Forging Fromage{sigh}  The sad thing is, I made this Pineapple Habañero Hot Sauce before Natashya and I even "formally" issued the challenge.  It just kept getting pushed back further...and further...and further.  By adding about a quarter of a pineapple that I caramelized really nicely on the grill to a batch of Rick's Habañero Hot Sauce...I got a big bottle full of tasty, yet totally mouth-numbing goodness.

...and this is one of the things I made with that hot sauce...Pineapple Habañero Hot Wings.  Fair warning: have a bucket full of ice cold cervezas within reach to put out the fire.  In your mouth.  I made them the "usual" way...in the oven, though- not fried.  Dipped in a mixture of hot sauce and melted butter.  Mmmm.

Oh my gosh!  I feel about twenty pounds lighter after clearing out these photos.  Thanks for sorting through the mish-mosh with me.  Wonder how long I can keep the folder "clean"?

What do "the King", Refrigerator Pickles, and White Truffle Oil have in common? {mish-mosh}

Not a whole lot.  Other than they have all made their way into my first mish-mosh post in quite a while.  If you've never seen one of my mish-mosh's before, basically it's a time when I share a bunch of photos that have been sitting around on my computer for a while.  Taking up space.  Begging to be shared.  For one reason or another, they never earned their very own blog post...but they hung around long enough (some much, MUCH longer than others), that they deserved to be talked about.  Usually in a mish-mosh post, I won't share a recipe, but I will share links to the source with a mention of how I changed it...if I can remember back that far.  This is the first of two mish-mosh's coming your way.  I hope you enjoy!

Some of you may remember that my oldest child...my teenager (!)...has a thing for sandwich making.
  I wonder where he gets it.  Not long after he made that infamous Teenager Sandwich, he decided it was time to make everybody some Elvis Sandwiches.  Not being one to argue with a good idea, I pulled out the bacon, bananas, and peanut butter and heated up the cast iron skillet.  Yum.

When it comes to Pineapple Upside Down Cakes, I am all for them.  But honestly, I do prefer a "made from scratch" version like this particular Fresh Pineapple Upside Down Cake which used fresh pineapple, cut into chunks instead of the usual rings...and dropped the maraschino cherries all together.  Every now and again I receive an email from Cook's Country to test a recipe that they are working on.  Then I go to answer a survey about the recipe, ingredients, final product, etcetera.  I love the idea that I had a part in "developing" their final recipes.  This was one of them.  And it rocked.  Every time I think about pineapple upside down cake, I'm reminded of a garlic version (think garlic in place of cherries) I made a number of years ago.  Surprisingly, it was pretty darn good.  One of these days I'll make it again...and blog about it.  That's fair warning.

Okay, this one's been hanging around since last Autumn sometime, I believe.  If I remember right, it was a Quick Chicken Cacciatore that I adapted by adding spinach from Nigella.  I think you can find the original in Nigella Express.  But I'm not going to go look now, so forgive me if I'm mistaken.  I remember it being a simple, delicious meal...but nothing so show stopping that it begged to be blogged.  Obviously.

This was one of those "back of the bag" recipes.  You know, right up there with "back of the box" or "back of the jar" food.  Often they are quite good.  And easy for a good family meal, but nothing too extraordinary.  Such was the case with this Chicken Noodle Casserole that I found on the bag of an egg noodles package (Meijer brand, I think).  Everybody gobbled it, but I didn't think it was anything you probably hadn't seen and eat many times before.

When I saw this Crusty Farm-Style Fried Chicken over at Mary's place, I knew I'd be making it soon.  It sounded so good.  And it was.  My only qualm (as I knew it would be), was how the bottoms of the chicken lost their crunch when I put them into the oven after the initial frying.  I even put a rack down first, but this is always my luck when I try finishing fried chicken in the oven.  Oh well.  It was still might tasty, if a bit soft on one side.

When I saw the recipe for Grilled Pierogies and Kielbasa in the July/August '11 issue of Food Network Magazine, my mouth instantly began watering.  Unfortunately, the same didn't happen when I actually bit into the dish.  Don't get me wrong, it was okay.  I love pierogies.  But it wasn't worth writing home about.  It's pretty though, isn't it?

Okay.  Waaaaay back in January or February, I started seeing Charcutepalooza posts everywhere.  Heck, I even did one myself.  I ordered the Ruhlman book Charcuterie with the best intentions of joining in monthly.  You may have noticed my homemade corned beef was my one and only post in this effort.  {sigh}  I just found myself caught up in other things and my trip back to garde manger took a back seat.  But no matter what happened, I do love this book and think it deserves a place on any dedicated cook/chef/foodie's bookshelf.  This Lemon and Herb Brined Turkey Breast comes from the book.  And it is FANTABULOUS! Best intentions...

These Pickles date all the way back to last summer when my neighbor dropped a cucumber bomb on me.  A very large, heavy cucumber bomb.  That's my pickle-lover in pickle-heaven back there.  I have no clue where the recipe came from.  It's on the tip of my tongue, but apparently it doesn't want to jump off.  Let me just say, they were garlicky and gone in no time flat.  I think they were the type that sit in the fridge for 5 days before you can eat them. Hmm.

And can I just take this moment to share my favorite snack with you?  That would be Truffled French Fries.  Which means, take your favorite french fries...I don't care if they are hand-cut and homemade or frozen and cooked in the oven.  Then you sprinkle them with some Truffle Sea Salt.  Then you drizzle them with some Truffle Oil.  Then you dip them in Truffle Aioli.  This is heaven on earth.  Have I ever told you that just unscrewing the lid of a bottle of truffle oil and breathing deeply brings tears to my eyes and a smile to my lips?  True story.

Do you remember those chewy, amazing, addicting Sourdough Bagels that I told you about a while ago?  Well, while I love them as-is, every once in a while, I like to throw in some different flavorings.  You know, switch it up a bit.  Well, a ton of freshly chopped rosemary and freshly grated parm is one of my favorites.  This is them... Rosemary and Parmesan Sourdough Bagels.  You could also throw some raisins and cinnamon-sugar into the original recipe for a different, sweet-tinged batch.

I made this Spice-Rubbed Crockpot Chicken after being directed to this recipe from somewhere else.  Unfortunately, I can't recall that "somewhere else" anymore.  I think I stuck pretty close to the recipe.  I'm pretty sure we liked it.  And it was a cinch in the crockpot.  That's all I remember.  I wonder if I saved it because I liked the color so much?

Toasted fennel seeds, coriander, and black peppercorns.  Sexy, seductive, fragrant.  And I for the life of me, I can't remember what I used them for.  But I remember how much I liked the combination.

I will conclude this big ol' batch of mish-mosh with one of the "go-to" meals in our house, Spiced Chickpeas.  Since we can almost always count on having cooked chickpeas either in the fridge or in the pantry (because they are a favorite of both the hubs and myself), we often just throw them in a pan with some olive oil and a handful of spice.  Hmmm...I think I normally include smoked paprika, garlic powder, dried minced onion, oregano, crushed red chiles, thyme, salt, and pepper.  It may vary a bit, but that sounds about right.  If there's some sort of green around, I'll throw that in with the chickpeas.  Top it off with a fried or poached egg, and it's the perfect, quick, satisfying meal!

A bit of tasty chatter ...including events, mixers, and randomocity.

Pheeeeew!  Can I just say?  January was insane!  I'm not really sure if I came up for breath for at least 31 days.  There was so much going on and so many things to take part in.  I hosted three events here other than my ongoing Tortilla Soup event.  ALL of which included roundups and one of which included a giveaway...Presto Pasta Nights, Tackling Bittman, Bread Baking Day #36 (plus the Tortilla Soup Challenge roundup #4)!  I'm not complaining, though.  I had an absolute blast!  Lost in a bit of a whirlwind.  But never-the-less...  I also participated in a couple challenges, including Ott'A's Iron Chef Challenge: Duck and the newly minted Dessert Wars: Nutella(BTW...I am honored to be the winner of the Iron Chef Duck challenge- I'll be receiving $150. worth of duck from Maple Leaf Farms!  Awesome☺.) There was so much more...each day was filled with something tasty.  2011 definitely started off with a BANG!

I think I'll be laying a little low this month.  Jumping in when something fits a theme, but I'm feeling the need for a little less "pressure".  So...  At least that's how I'm feeling right now.  But I can be fickle, so no guarantees.  I won't be laying off the posting though...because I have lots of fun and delicious things lined up as we speak.  I can't deny you anything that is both fun and delicious. 

Did you, uh, notice that picture?  The of the KitchenAid up above?  After many years, I decided to finally give my trusty, old white mixer a makeover!  Long overdue.  Inspired by Tamy over a year ago, it's something I've been meaning to do, but only just got around to.  Okay, got around to coaxing Mexi into doing it for me.  Same difference, right?  Right.  From basic white to hammered copper in the matter of a couple of hours.  It's like having a brand new mixer...and I LOVE IT!  So pretty.  I may have nuzzled my cheek across it.

Next project...that horrible place where my counter top meets the wall.  Ugly.  I've been trying to pretend it's not there since we moved in.  That's a bigger project, but one that will probably at least get started when the weather warms up!

2. I sing all the time.  ALL THE TIME!  I love music and many different kinds.  I worked in record stores in high school and college before going back into food service.

4. I'm the oldest child...and I'm twelve years older than my youngest sibling.
5. I hate having cold feet.  Like, literally.  I also hate sleeping with socks on.  These two things are often at odds with each other in the wintertime.

I am a complete and total bookworm.  Always have been.  I have so many books that I don't actually know how many I have.  I have boxes and boxes of them, as well as sagging bookshelves throughout the house.  I don't think one can ever have too many books.  My husband tends to disagree.  But loves me anyway.
7. I can recite the entire movie The Goonies word for word.
