Fourteen years ago, I was in charge of the Thanksgiving turkey for the first time. I was 25 and finally ready to join the ranks of my grandmas, mom, and aunts; I was finally going to be hosting the meal that I look forward to for an entire year. I'd been training for that day my whole life by helping choose how we were going to flavor the bird when my mom hosted...by researching the pros and cons of brining...by reading up on wild vs frozen. I was a master baster. Go ahead, snicker. I was ready.
So, I set about my normal routine of figuring out how I could make the best turkey my family had ever eaten. Visions of breast meat so juicy that it garnered involuntary whimpers from the hungry mouths of my guests. Skin so burnished and crispy that I'd have to fend off sneaky fingers with the tines of my carving fork. Turkey that elicited a satisfied smile when looked back on throughout the year.
You know, a turkey that was no less than amazing—an A++++++++.....

Raspberry Lemonade Margarita
Cocktails! It's all about the cocktails! When Leslie and I were talking about what we should make for she made, ella hace this month, I suggested either going with a lemons theme or a cocktails theme. Either way, I already knew what I was making. A margarita - with a twist!
Cinco de Mayo is right around the corner, so of course I need to test out a few new margarita flavors. Now, I should tell you that last week I received a delivery that contained a few samples of Partida tequila for the purposes of joining in the #limepocalypse that's happening in the US right now.

Lavender Lemon Bars
What does one do when one receives an entire case of beautiful, sunny Limoneira lemons? One makes lemon bars, of course! Now, I don't live in a climate that allows for an abundance of citrus trees. I'm sure there are a few scattered about, being nurtured inside of a warm porch or a green house. But that is neither here nor there.
So, when I had the opportunity to dive into three varieties of lemons that were shipped right to my front door, I got down to business. These gorgeous lemon bars, tinged with the scent of lavender buds, disappeared in short order (plus, I shared some with the neighbors). And while I have a favorite lemon bars recipe, this version nips forcefully at its heels in competition!
So, when I had the opportunity to dive into three varieties of lemons that were shipped right to my front door, I got down to business. Lemon Drop Granita {she made, ella hace}
Well, summer is officially here! And to celebrate, Leslie and I decided to break out the Nieves for she made, ella hace this month. Nieves are basically cold, icy treats. The word nieve is used to describe all sorts of cold things, even snow or ice. So, potentially we could have chosen to make paletas or ice pops, ice cream, raspados, snow cones, or anything along those lines to share with you.
Knowing me, you'd think I'd have made some paletas to share, right? Well, I don't want to overwhelm you with paletas - and since I'm bringing you at least one type every week for the whole summer, I decided that I wanted to go in a different direction today. I had every intention of making a raspado. I've been craving a coconut horchata raspado with bright summer raspberries. And mi esposo has been craving a favorite of his that he used to get in Mexico, a rompope con pasas raspado - which I imagine is sort of along the lines of rum raisin ice cream.
Unfortunately, the time flew by too quickly these past couple of weeks, and I haven't had the chance to make them yet. But I will soon. Promise. Instead, I went a similar route and made a granita. Which is definitely close enough. The Italian version is a water, sugar, flavoring version where they are all frozen together (as opposed to making a flavored syrup to pour over crushed ice). I went for one of my favorite hot weather flavors - sweet, tangy lemon. BUT, with an added twist. Vodka! It's basically a Lemon Drop cocktail in frozen form. Summertime fun for a sweaty, frazzled mami. I like it.
Now, mi amiga Leslie, on the other hand - she DID make a raspado...one I'd give anything to have in my hands today as I walk outside into the hot and sticky 90° heat. As a matter of fact, I think eating my Lemon Drop Granita, and Leslie's Nieve Raspada de Jamaica would be a match made in heaven! What do you think?
Also, be sure to visit Leslie all week long, because starting Monday, she's going to be doing a full week of Nieves Raspadas! I cannot wait. I know she'll inspire me to get my booty in gear and make the ones we are craving this week, as well.

Lemon Drop Granita

Prep Time: 5-10 minutes (+ overnight in the freezer)
Cook Time: n/a

Ingredients (serves 4-6)
- 3 cups simple syrup
- 1 cup freshly squeezed lemon juice (from approx. 10-12 lemons)
- 1/2 cup (4 fluid ounce) vodka
- 1 lemon sliced paper thin, optional
Instructions
Whisk the simple syrup, lemon juice, and vodka together. Pour into an 8-inch square metal pan (or something similar). Add the lemon slices, if using.
Place in the freezer overnight, occasionally scraping across the surface with the tines of a fork.
When you're ready to serve the granita, rake a fork through it, and scoop it into cold serving glasses or dishes, with a spoon and/or a straw.
Combine equal parts sugar and water in a pan and bring to a boil, stirring to dissolve sugar. Remove from heat and allow to cool. Store in a covered jar or bottle in the refrigerator. For the amount needed in this recipe, you'll need approximately 2 cups of each.

Meyer Lemon Curd Brioche Crescents inspired by Last Holiday | #FoodnFlix

I recently watched the film Last Holiday for Food 'n Flix (chosen by our host this month, Leslie). I couldn't believe I hadn't seen it before. And actually I couldn't even recall seeing any trailers or previews or commercials for it. It may sound like a "holiday" film - but holiday is used in the broadest sense. Or maybe the British sense. As in "going on holiday". That would be vacation for us Americans. Which leads me to believe that nobody who works in my public library system has actually seen this film that they have on their shelves. Because I found it in with the Christmas movies. It is NOT a Christmas movie. Okay. Anyway.

BSI: LEMONS Roundup & Winner
I should have foreseen this, but somehow I didn't. My list of bookmarks with the label 'lemon' is now bursting at the seems! Although I can't say that's a bad thing...because I crave citrus quite often and I'm always looking for a new way to prepare it! We have so many wonderful LEMONY foods this week that run the gamut from soups to side dishes to main courses with different meats and fish to cooling beverages to breakfast and snack foods all the way through to dessert! I'm feeling particularly sunny and happy after visiting everybody and now I'm looking forward even more (if that's possible) to warm air and sunshine.

And now we will end where the week began...with these Lemon Bars that I made to take to a program at school...and then wound up making again almost immediately for home. So fantastic!
Every single dish, side, soup, and dessert that was sent in this week in gloriously lemony in its own rite, but the thing that I have not been able to get out of my head since the moment I laid eyes on it was the Lemon Rosemary Olive Oil Cake from Amanda! But honestly, everything looked so wonderful, I wish I could have a big, lemon-filled buffet to try everything. Lemon Bars
Once upon a time, lemon desserts hated me. I could never get them to turn out right...which was infinitely frustrating since I adore the tartness of lemon combined with a little sweet somethin'. After some "fails" and disappointments and "eeehhh, it's ah-ight's", I was ready to try again. And just to prove that I enjoy making things hard on myself, I decided to bake them to share with others. So, if I failed miserably I would do it in a public arena. Nothing like a little pressure to make things go smoothly.
As it turned out, I didn't fail. In fact, I triumphed colossally. And off to school my triumph went. For moms and kids to enjoy. I made sure I snatch one...the last one I might add. I'm odd like that. I'd rather eat something that I baked and I know I will enjoy than grab some random food made by some random person. What can I say? These lemon bars were so great that I made another batch for home less than 48 hours after this giveaway batch. I will also be bringing them to the next family get together (at mama's request...although I planned on it, anyway). They're adapted from an Ina recipe in that I made using one and a half times the (awesome, shortbready) crust so that the base would be a bit thicker. Also, instead of making a lip (which I did for the first batch), I prefer the crust and filling to be even (which I tested on the second batch). Equal cookie and lemony custard in each and every bite.
And okay, I suppose I was being a bit melodramatic about the public humiliation. I totally gave myself enough time to make a backup...should I have failed.

Spicy Pork Salad

It is such an amazing late morning outside! And that has been my problem...well, not problem per se...but that is why I haven't been able to post. It's too gorgeous out! I made this easy salad a whole week ago...and it has been waiting patiently to be shared. The memory has...not the salad itself. This was another quick and easy idea from Kitchen Express (Mark Bittman).
I actually changed to salad part up a bit so I wouldn't have to run to market, but the Spicy Pork part, that stayed the same. Thin pork chops coated in a spicy yet sweet and oh so flavorful rub will grill up super quick and add a lot of flavor on top of a simple tossed salad! Of course, you could use this rub on any cut of pork (or chicken, etc) with delicious results!
A great, quick salad that will let you get back outside to enjoy the beautiful day!

Lemon Mascarpone Blondies...and only 3 months later.
Moist...lemony...delicious!! I made these blondies a while back...back before the hiatus. Back when we made Mascarpone for Forging Fromage I didn't get around to using it in time to post it...but this was one of the things I ended up doing with it! Can you imagine that creamy, smoothness and how well it complimented the yellow tartness of that lemon zest? Oh man!

I remember originally seeing this recipe in a couple of places...I think originally at Simply Recipes but also Joanne's version at Eats Well with Others...and I remember thinking how great they sounded. Well, they definitely exceeded my expectations...they beckoned me from the pan...
Lemon Mascarpone Blondies
recipe by Vanilla Garlic found at Simply Recipes
yield: 9 (good-sized) blondies
1/2 c. butter, melted
1 c. packed brown sugar
1 egg, lightly beaten
1/4 tsp. vanilla
8 oz. Mascarpone
2 Tbs. Lemon Juice
2 1/2 tsp. lemon zest
1/2 tsp. baking powder
1/8 tsp. baking soda
pinch salt
1 c. AP flour
Preheat oven to 350 degrees F. Butter and flour an 8x8 pan.
Whisk butter & sugar in bowl. Whisk in egg & vanilla. Add juice, zest and mascarpone...mix thoroughly.
Add flour, baking owder, baking soda and salt...mix.
Pour into pan & spread. Bake 25-30 minutes or until it passes the toothpick test. Cool on rack.
Yum. Now I want to make them again right now! And speaking of homemade cheese (I was. Speaking of homemade cheese. The mascarpone. Sort of in code, but...), we're making Halloumi over at Forging Fromage this month if you want to join us!

Sauteed Feta Cheese w/ Parsley, Raisin, Caper and Pinenut Sauce

I say Bring on the cheese...the stinkier the better!!! I do love cheese in pretty much any size, shape or form. When I ran across Tyler Florence's recipe for Sauteed Feta Cheese, I knew it was something I wanted to try. I've had the page bookmarked for quite a while and finally got around to making it a couple of days ago.
Sauteed Feta Cheese w/ Parsley, Raisin, Caper and Pinenut Sauce
slightly adapted from Tyler Florence's Eat This Book
for the Parsley, Raisin, Caper and Pine Nut Sauce:
1/4 c. golden raisins, coarsely chopped
3 Tbs. capers, drained and coarsely chopped
3 anchovy fillets, finely chopped
3 Tbs. Pine Nuts, coarsely chopped
1/2 bunch fresh flat-leaf parsley, chopped (1/2 c.)
1/4 c. extra virgin olive oil
juice of 1 lemon
kosher salt and freshly ground black pepper

1 large block (1 1/2 lbs.) feta cheese
1 c. AP flour
extra virgin olive oil
1/2 lemon
Stir up all of the ingredients together in a bowl and season with salt and pepper.
Cut the feta into 1/2" thick slices. Put flour on a plate. Put a large nonstick skillet over medium-high heat and coat with a 2 count of oil. When the oil is smoking, dredge the cheese slices in the flour, and add as many slices as will comfortably fit in the pan. Brown about one minute on each side, until golden brown.
Squeeze some lemon juice over them, then use a spatula to carefully transfer to a platter. Repeat with the rest of the cheese, adding a little more oil to the pan if you need to . Spoon the chopped-herb sauce over the cheese and serve.
My thoughts on this recipe: I loved it! The cheese is so pungent and in-your-face...but the sauce adds so many layers of flavor to the dish. A slight crunch from the pine nuts, a little sweetness from the raisins, the bright flavors of the parsley, the richness of the anchovy, the saltiness of the capers...YUM! Tyler notes that this "goes down great at a cocktail party".
