Green Chile Piñon Burgers | In the Blue Hour

Green Chile Piñon Burgers | In the Blue Hour
Today I'm kicking off a TLC Book Tour for Elizabeth Hall's new novel, In the Blue Hour. The majority of this story is set in beautiful (or so I imagine) Northern New Mexico. For somebody who doesn't like extreme heat, I've always entertained the idea of trying New Mexico on for size—especially after immersing myself in a book dripping with such inviting descriptions of the area.

Elise Brooks lost her husband 8 months ago when, driving her car, sailed off the edge of a cliff. She has been lost in grief and guilt every day since it happened, especially since she saw it happen in a dream almost a month in advance. Even knowing how in-tune Michael and that part of her family were with dreams and the spirit world, she never told him about her dream, because she didn't see him in the car. Now, she can't help blaming herself.

Chili Cheeseburgers | Fright Night meets 'Salem's Lot
Welcome to another round of the All Vampire Book and a Movie Challenge! Our assignments this month were Fright Night (the original) and 'Salem's Lot by Stephen King. The connection between these two stories comes in the form of two young men who discover discover and try to fight the vampire(s) that is killing the people in their hometown. Coincidentally, both of their love interests are turned, though with different outcomes, and a once-empty house that is now occupied by a vampire.

Green Goddess Fish Burgers | #FishFridayFoodies

Green Goddess Fish Burgers
Yesterday I mentioned that I recently took the Healthy Heart Pledge, promising to add seafood to our menu at least two times per week. Today I'm back to share a delicious dish that fits beautifully into our new routine. This recipe is also part of this month's #FishFridayFoodies theme, chosen by yours truly since I'm hosting this month - fish and seafood burgers!

Here's the scenario: it's summer, the grill has been fired up over and over again, and more often than not, you wind up throwing some burgers over the flame. That's fine and dandy, but a girl's gotta have options. Maybe you're tired of regular burgers. Maybe you have a guest who doesn't eat red meat. Maybe you recently committed to a challenge that encourages you to use fish and seafood two times a week in new and exciting ways.

Mahi Mahi Burgers Glazed with IPA-Hoisin Barbecue Sauce | #BeerMonth

Mahi Mahi Burgers Glazed with IPA-Hoisin Barbecue Sauce
Although I don't limit cooking with beer to once a year, I always look forward to April when Sophia from NY Foodgasm holds her annual #BeerMonth event! There are so many varieties and producers of beer, from big box to the small artisan, that I love seeing which one everybody cooking along will choose to use and what flavors they will be paired with.

I chose a hoppy Lagunitas IPA to cook with today. For anytime drinking, I normally gravitate towards stouts, porters, or dark ales, but when I'm in the mood, I can drink the heck out of something really hoppy and "bitter". This particular IPA, made with 43 different hops and 65 various malts, is a bit carmely and very easy to drink. It cuts fatty or heavy components of a meal easily, making it a nice accompaniment to a meal.

Eastman's Oatmeal Burgers inspired by The Walking Dead

Oat, Farro, and Bean Veggie Burgers
Welcome to day 4 of Dead Eats: Recipes Inspired by The Walking Dead hosted by myself, Kim at Cravings of a Lunatic and Dionne at Try Anything Once Culinary. I hope you're having as much fun as I am with these recipes—and that you're as anxious as I am for Sunday to finally be here! If you haven't watched the first half of season 6 yet, here's your fair warning that there will be some spoilers in this post!

Here's the thing. I'm a Walking Dead fan through and through. I love the weeks with intense action and I also love those weeks that some people complain about saying they're "too slow" or "too boring" or "nothing happened". That's character development people! To understand people, it's important to know where they come from. Earlier this season we had one of those episodes; it was extra long and calm, giving us time to catch our breath and calm down after the crying, screaming, fist-shaking episode the week before.

Western BBQ Bison Burgers

Western BBQ Bison Burgers
Usually when I make something big and meaty that would be really nice to wash down with a cold beer, I get comments like "oh, my husband/boyfriend/man would love this" and "that is some man-pleasing food". Ummmmmmmm...okay. I get it. My guy totally appreciates brat-topped pizza, sticky ribs, and fat burgers. But, you know what? So do I!

Those are what one would call backhanded compliments, right? Inadvertent or not, I tend to get a little indignant when I read them. Apparently, as a woman, I should be massaging my kale and frosting my dainty cupcakes. I do like kale. A lot. But that's not the point. Why must I feel shame for enjoying an extremely fat, extremely juice, extremely flavorful burger right alongside my man?

Fortunately, when it all seems too much, I can count on ladies like Kita at GirlCarnivore to have my back. She knows the joy in not only making, but devouring, some perfectly cooked meat. I mean, she is the mastermind behind #BurgerMonth, so obviously this girl is all about enjoying epic burgers and such.

Grilled Shrimp Burgers

Grilled Shrimp Burgers
Now that the weather has warmed up and the grill has once again taken up residence on the patio, I've been a grilling fool. I'm sure everybody has their own "go to" foods for the grill. Ours are chops, brats, hot dogs, chicken breast, corn on the cob, beef burgers and marinated skirt steak (for tacos). On special occasions I actually get a nice thick steak. But what I really look forward to is that familiar smokiness permeating some fish or seafood.

I have pescetarian tendencies, but my family does not. Each of them likes certain types of fish or seafood, but would revolt if I tried to completely remove other meat permanently from their diets. So instead, I just slip some in as often as possible.

Sweet and Sour Pork Burgers w/ Pineapple Slaw

This post is sponsored by the National Pork Board in conjunction with One2One Network. All opinions are my own.
Sweet and Sour Pork Burgers with Pineapple Slaw
What do temperatures going from from 0° to 70° in a matter of 7 days bring? Yes, flooding. But also, the flinging open of windows, the return of short sleeves, and the smell of outdoor cooking clinging to the air. The melting of the icy mounds that stood in my way of the garage door last week meant that it was time to wheel out the grill.

My husband volunteered (really) to check it over and gather all of the utensils while I made a quick trip to the store. Since I'll be partnering with the National Pork Board to bring you recipes and grilling tips over the next couple of months, I figured what way to kick off grilling season that with some pork burgers! I mean, burgers are simple to throw together, but you can customize them in all sorts of exciting ways—hello possibilities!

These pork burgers have a bit of an Asian-twist added to them by the addition of sweet and sour sauce. Any sweet and sour sauce will do. If you have a homemade version that you love, by all means, use it. If not, you can visit the international aisle at your local Walmart and find several options. Look for one that doesn't have chunks of fruit or veggies in it for this recipe, because we're going to add it to the pork and brush it on while the burgers are grilling to form a nice, glossy glaze.

Spicy Carrot-flecked Chicken Sliders

Buffalo Chicken Sliders
This is one of those times that the photos just don't do the dish justice. That's my fault. I've been so preoccupied this week. That always happens when I return from a trip—it takes me a few weeks or so just to get my brain and my surroundings back on a schedule. But despite the lousy pictures, these sliders are too tasty, too perfect for game day, and too simple not to share with you during our #10DaysofTailgate event.

Basically, they're just chicken meatballs. You could make them a bit smaller and crowd them onto a long crusty bun for a buffalo sub. Or just take one and center it on a slider bun for easy grab-n-go bites. Okay, I know it looks like even the slider bun is too big for these little guys, but once you actually give 'em a smash down to prepare them for a bite, the meatball spreads and fills up that extra space you see.

These could be made using your favorite hot sauce, but if you can get your hands on a bottle of Carrot Karma Hot Sauce by Intensity Academy, that is without a doubt, the way to go. Made with only a few natural ingredients, it is carrot-based, and therefore leaves beautiful orange flecks of sweet heat (there's also habanero in there) throughout the chicken and on the bun.

Secret Ingredient Sliders

Secret Ingredient Bacon Cheeseburger Sliders
While you'll never hear me complain about a simple, delicious steak thrown on the grill or in a sizzling hot skillet, there are so many other speedy solutions. Case-in-point, these sliders. The majority of the time it takes to make them is in the oven; aside from that, it's only a matter of mixing up a few ingredients.

Now, you may notice that they contain a secret ingredient - so please, go into this meal-making venture with an open mind. And assuming you don't have any family or friends with a nut allergy, try sliding the finished product in front of them at dinner time and have them try to guess what the secret ingredient is. A few sly palates may detect it, but most will be left guessing.

I've been making these sliders for over four years, all thanks to another blogger. This blogger no longer has a blog, but these are based on a recipe shared once by her brother-in-law. So, you may have guessed the ingredient by now; I gave a little hint above, or maybe you scrolled down and saw the photo. But for those who weren't really paying that close attention, it's peanut butter!

Garbanzo and Brown Rice Burgers

Garbanzo Brown Rice Burgers | www.girlichef.com
It's not often that I make a point of eating meatless meals. It's usually just done, thrown into the rotation like any other meal. And while it's true that at times one of us will crave a big ol' juicy steak (that's usually me), some messy-face ribs (daughter), a comforting roast chicken (youngest son), some sticky carnitas (the hubs), a fat burger (oldest son), or some good greasy bacon (everybody) - I don't think any of us feels that we have to eat meat at every meal. We always have eggs, beans, lentils, or some other source of protein hanging around.

That said, there are a few meatless meals that I crave from time to time. Broccoli-Tofu is one of them. A platter loaded with roasted broccoli and cauliflower with a giant bowl of garlicky homemade hummus and grilled pitas for scooping everything up is another. And the soft tacos that I ate almost daily about 18 years ago are another - thick, homemade flour tortillas warm and stuffed with Mexican rice, refried beans, lettuce, tomato, cheese, salsa, guac, and sour cream {swoon}!

Piggy Burgers w/ Sundried Tomato Ketchup {she made, ella hace}

Piggy Burgers w/ Sundried Tomato Ketchup | www.girlichef.com
In our house, when you mention "burger", you can pretty much guarantee that seasoned ground beef patties topped high with lettuce, tomato, onion, and bacon (of course) are the first things that pop into everybody's minds.  Toasted buns slathered with condiments (what they are depends on the mood)...ketchup, mayo, mustard, guac.  Sometimes I'll put a fried egg or some frizzled onions on top.  I've even been known to squash some potato chips under my top bun.  Oh, and don't forget the cheese.  The ooey, gooey, melty cheese.  Or perhaps a creamier goat cheese or blue cheese layer.  Maybe a good mushroom and swiss burger?

Okay, I just fell head first into my own train of thought there, and almost got lost!

What I meant to tell you was that when my friend and she made, ella hace partner-in-crime Leslie suggested that we make BURGERS our theme this month, I told myself I was going to make one a little out-of-the-norm.  For me, at least.
Piggy Burgers w/ Sundried Tomato Ketchup | www.girlichef.com
It was easy, really.  Not long before that point, I had been flipping through a few new cookbooks that I picked up from the library.  One particular page that I had marked was one for burgers.  Pork burgers.  Yes, I took the pork on a burger beyond the bacon.

And really, a burger is no better than its condiments and toppings.  Fortunately, this one has a rich homemade ketchup made from the concentrated sweetness of sundried tomatoes, with a slight whisper of heat from one of my two favorite dried chiles, the pasilla.  Add to that some fragrant cilantro leaves, my latest obsession (kimchi), and a handful of crunchy pork skins?

This burger is definitely greater than the sum of its parts!

Speaking of great burgers, I am now wishing (as usual), that Leslie and I lived down the street from each other.  Because while the whole fam enjoyed this twist on our "normal" burgers, just the thought of Leslie's Roasted Poblano Burgers w/ Chile de Arbol Guacamole makes me whimper.  Pretty sure we're having burgers again this week.

Piggy Burgers w/ Sundried Tomato Ketchup

by Heather Schmitt-Gonzalez
Prep Time: 45 minutes (mostly unattended)
Cook Time: 30 minutes
Keywords: entree condiment pork sundried tomato American

Ingredients (8 (double-patty) burgers)
    for the burgers:
    • 2 pounds ground pork
    • 1/4 cup hoisin sauce
    • green part of 6 scallions, finely chopped
    • 2 teaspoons sea salt
    • 1 teaspoon freshly ground black pepper
    for the sundried tomato ketchup:
    • 6 ounces sundried tomatoes (dry-packed or in oil, blotted)
    • 2 pasilla chiles, stemmed & seeded
    • 2 cloves garlic
    • 1/2 cup balsamic vinegar
    • 1/2 cup dry red wine
    • 1/4 cup packed dark brown sugar
    • 1 tablespoon soy sauce
    • 1/4 teaspoon smoked sea salt
    • 1/4 teaspoon freshly ground black pepper
    • ~1.5 cups water
    to serve:
    • 8 buns or rolls, split
    • Quick Kimchi
    • fresh cilantro leaves
    • chicharrón (good fried pork rinds/pig cracklin'/pork skins)
    Instructions
    making the burgers:
Line a large baking sheet with wax paper; set aside.

Combine all of the ingredients in a large bowl, using your hands. Form into 16 thin patties (weighing about 2 ounces each - you'll use two patties per burger). Line the patties up on the prepared baking sheet, adding another layer of wax paper and stacking, if necessary. Cover with plastic wrap and refrigerate for at least 30 minutes before cooking.

    making the ketchup:
While the burger patties are chilling, combine all of the ingredients for the ketchup, except the water, in a medium saucepan. Bring to a simmer, cover, and cook for 15 minutes on low.

Scrape into the jar of a blender and add half of the water. Puree on high speed, slowly continuing to drizzle in the rest of the water (or as much as you need) to create a thick, smoothish sauce. Transfer to a bowl for use, or refrigerate in a container with a lid for up to 2 weeks.

    cooking the burgers:
Heat a large cast-iron skillet over medium heat and add 1 tablespoon of peanut, olive, or vegetable oil. Add 4 of the pork patties to the pan and cook for about 4 minutes, flipping halfway through, or until cooked through. Transfer to a plate set in a low oven and repeat until all of the patties are cooked.

    finishing the burgers:
Toast the insides of the buns or rolls on the hot cast-iron skillet before turning off the heat. Smear some of the Sundried Tomato Ketchup on the bottom buns and top with a pork patty. Spread another little daub of ketchup on those patties, and then top with remaining patties. Top each with some kimchi, cilantro, and chicharrón.

    Serve immediately and enjoy!

    notes:
Feel free to use single patties in a burger for younger eaters (or those with smaller appetites). For the ultimate experience, drink a cold root beer alongside these piggy burgers.

What happens when two American girls who are both married to Mexican guys find out that although one of them lives in the U.S. and one of them lives in Mexico, they both love eating the same food?  Well, naturally they decide to get "together" the only way they can and cook up the same dishes.  Or perhaps take the same ingredients and talking about them in their own voice or using them in their own way.

Leslie and I have teamed up to occasionally cook/bake/make a our own versions of the same food.  We want to see how similar (or how different) they turn out.  Other times we will pick an ingredient and use it however we choose...or maybe just talk about it.  Good food knows no borders and we hope to share the food we love with you.  It's not a competition, it's a showcase.  We will post on the same day as each other and would love to hear your thoughts on what we've made and how you make it.

Join me (here at girlichef) and Leslie in her kitchen (at La Cocina de Leslie) for some delicious food.

Gwynie did it again.  She wrote another awesome cookbook.

I remember when I checked My Father's Daughter out from the library, read through it, and immediately went to Amazon to order a copy for myself.  Well, the same scenario played out with It's All Good.

Now, I didn't go in expecting to love either book, I just did.  I'm not a Gwyneth-Paltrow-the-actress fanatic.  (I am a fan, though.)  I didn't neeeeed to have the book because she is a celebrity.  Or because she's married to a celebrity.  The books and her voice on the pages are what make them attractive to me.  Beautiful, soft photographs.  A healthy, without being pushy, perspective.  And yes, there are a couple of ingredients here and there that didn't have a regular spot on my pantry shelves before - but they do now. Hello quinoa flakes and brown rice syrup.  Lovely to meet you.

    Chickpea Sliders Bite!

    Chickpea Sliders Bite!

Mark Bittman. The Minimalist. Why do I adore thee? Hmmmmm. So many explanations. And I'm going to post one once a week for the next six months! Yup, we are now cooking the recipes of MB over at I Heart Cooking Clubs YaY! It was fabulous cooking with Nigella for so long, but now I get an opportunity to start working my way through all of the bookmarked pages in Kitchen Express!! This book is so killer...and I've cooked from it plenty already, but I haven't even made a dent in the things I want to make in there!!! Of course, that's not his only book (I'll use his other recipes as well) but it's definitely my favorite at the moment. Our introductory Bittman theme is Bites of Bittman! So, now I can remove the bookmark from Chickpea Burgers. Oh yeah, we're talking bites...I made them into sliders. This is a burger very reminiscent of hummus Looooove it. In a sing-song voice. Looooove it. Do you remember me telling you before how this is a book of recipes that are "precisely imprecise." Really. He said it. Precisely imprecise. What a perfectly wonderful oxymoron!
    Chickpea Burgers (or sliders)
    from Mark Bittman's Kitchen Express
Drain a can of chickpeas and put them in a food processor with a chopped shallot or some onion, a bit of oregano, paprika, salt and an egg. Pulse the mixture until its slightly grainy but even in consistency. Add enough flour--about a quarter cup--so you can form the mixture into flat burger patties. Sear them in olive oil until golden, about 4 minutes per side. Serve on good whole grain bread or a bun with tahini (optional), greens, and a squeeze of lemon juice.

I formed them into little sliders (made 8), drizzled with lemon juice and tahini and put a few cilantro leaves on each one. Oh yeah, and a Hawaiian Bread Roll. Mexi and I liked them. To my surprise, he liked them even more than I did...course he's always asking me when I'm gonna make hummus next...so I should have figured! They also reminded me a bit of falafel. Not exactly, but reminiscent in a certain way.
Now, what shall I make next!? Be sure to hop on over to IHCC to see what everybody else is cookin' up with MB!
