This month the Food 'n Flix club was invited by host Camilla from Culinary Adventures with Camilla to take a virtual vacation to the islands. Instead of choosing one particular movie title or series, Camilla left the field open for us to pick anything set or filmed in Hawaii. Immediately two favorites came to mind, and I knew I'd be choosing one of them. I chose my favorite of the two. The one that we watched countless times when my daughter was little (because it was her favorite); the one we can still quote word for word and sing the entire soundtrack through—Lilo & Stitch.

Stitch is an alien experiment gone wrong who escapes his planet, crash-landing on earth—Hawaii to be precise.  Mistaken for a dog that has been hit by a car, he winds up in an animal shelter.

I'm sliding in under the wire with my submission to the January 2020 (!) edition of Food 'n Flix, hosted by Camilla of Culinary Adventures with Camilla. Okay, I didn't make it in under the wire. That was a lie. That wire was a few paces in the past. I'm coming in last. But that's just because the new decade started with a bang! I gave you a little sneak peek of this month's movie pick back in July when I made a dish inspired by it (this Glazed Spam and Rice)...but I'm excited to be able to share another recipe inspired by the Netflix film Always Be My Maybe with you today!

Childhood best friends turned sweethearts Marcus and Sasha are neighbors growing up. Marcus comes from a pretty close-knit Korean family who spend a lot of time doing things together. Sasha and her (Vietnamese) family live next door. Unlike Marcus's family, she spends most of her time alone since her parents are busy running their store.

So, I'm the kinda girl who goes to the library and comes home with a stack of cookbooks so high they'd be dangerous if they fell on somebody. When I can carve out some time, I'll grab a pad of sticky tabs and start paging through. Every once in a while, I come across a book that I must (MUST!) have in my personal collection pronto. Chrissy Teigen's cookbook, Cravings, was one of those books.

I'm not going to go into depth about the book...yet—but that's because I want to do a dedicated review post on it (in fact, I'm so enamored of it that I'm contemplating a Julie and Julia-style cook-through). But I did think that this month's Fish Friday Foodies theme, fish in a dish, was the perfect opportunity to try one of the recipe I had bookmarked in it.

Today is the first Friday of the Lenten season, and in honor of that, Leslie and I are sharing fish and seafood recipes for today's edition of She Made, Ella Hace. So, here's the thing—I wasn't raised Catholic (and I'm not Catholic now), so I've never done the whole abstaining from meat on Fridays during Lent thing. This soup came about on a clean out the pantry and fridge night. I used a can of peas and a can of corn (I know - gasp!), along with the end of a bag of julienne carrots. But really, any frozen or fresh veggies will work here. Throw in some ribbons of greens, some snow peas cut on the bias, or some beautiful carrot coins. Switch up the herbs, or use only one kind.

Yesterday I mentioned that I recently took the Healthy Heart Pledge, promising to add seafood to our menu at least two times per week. Today I'm back to share a delicious dish that fits beautifully into our new routine. This recipe is also part of this month's #FishFridayFoodies theme, chosen by yours truly since I'm hosting this month - fish and seafood burgers!

Here's the scenario: it's summer, the grill has been fired up over and over again, and more often than not, you wind up throwing some burgers over the flame. That's fine and dandy, but a girl's gotta have options. Maybe you're tired of regular burgers. Maybe you have a guest who doesn't eat red meat. Over the years I've mentioned my penchant for seafood, which I think really took hold after my trip to Scotland's Inner Hebrides. I imagine any coastal location has a way of making you a believer—eating seafood moments after it was pulled from the water is an experience that everyone should have at least once in their life. But alas, I don't reside in a coastal area.

Fortunately it's easy to get your hands on good quality fresh and frozen seafood in this day and age. Flavor factor aside, eating fish and seafood just makes me feel a tad more virtuous. While I'm sure that's part mindset, it's actually a truth, since seafood is high in Omega-3s, healthy fats that are essential for heart and brain health.
