Whole Wheat Couscous w/ Smoked Salmon, Baby Kale, & Za'atar (+ The Village Press Bag 'n Box Olive Oil)

Okay.  I have a question for you.  Have you ever purchased wine in a box?  Have you ever enjoyed it?  A show of hands, please.

I'm gonna go ahead and raise add my hand to those raised high (or raised low).  I have.  I don't do it regularly, but that's not because I haven't found a good one.  Back in the day, wine-in-a-box was a cheap way to get a lot of wine.  Or an easy way to drink without your parents knowing.  If they weren't home.  I mean, you can't actually see the level of the alcohol, let alone mark it.

I know there's some wine snobs out there who have probably already cursed me and stopped reading.  Their loss.  Bag-in-box wines have really evolved over the past 5-8 years, in my opinion and they're used more often to save on costs - both for the manufacturers and the consumers.  But I digress...I'm not actually here to talk about wine-in-a-box.  I want to talk about its cousin, olive-oil-in-a-box.  The Village Press Olive Oil in a box to be precise.
Much like wine, olive oil in a box is a wonderful way to reduce costs for food service establishments and those who use a decent amount of olive oil in their everyday life (like you and me...food bloggers, foodies, and people who spend a lot of time in their home kitchens, too).

The Village Press bag-in-box Olive Oil has a tap for easy use and is very easy to store.  I have a ridiculous amount of glass bottles (that I'll never give up completely) lining my shelves and often I'm playing catch-that-bottle while searching for something that has found its way to the back of the shelf.   I love the idea of being able to eliminate one bottle.  It may seem insignificant, but that bottle could be the one that slipped by me and is now oozing all over the floor.  Making me sad and annoyed all at the same time.  The bag-in-box stores easily, is at the ready when I am, and it helps to retain the integrity of both the flavor and the nutrients present in the oil by blocking out harmful ultra-violet rays.

Sold!
product:  The Village Press Bag 'n Box Olive Oil (The Village Press Extra Virgin New Zealand Barnea Olive Oil)

category:  food

packaging:  sleek, easy-to-store bag-in-box with tap that holds 1 litre (32 oz.)

appearance:   greenish-yellow

taste:  grassy and (oddly enough) somewhat spicy

about:  The Village Press Olive Oil is made from the most widely grown variety of olive in New Zealand, the Barnea.  Their grove sits in the golden wine triangle of Hawke's Bay (olives do well in the same conditions that grapes do).  Due to the fact that they do not filter their olive oil in order to retain the most natural flavor and nutritional value from the olives, the appearance will be slightly cloudy.

Since olive oil is best stored out of direct sunlight and in a cool, dark place, The Village Press olive oil is packaged in dark bottles (or bag-in-box) to help deflect ultra-violet rays that can break down the oil and destroy its health-giving properties.  The bag-in-box is perfect for bulk and restaurant sales.

The Village Press Olive Oil making process:
  • The trees are shaken at harvest time and ripe fruit collected in a blanket under the tree.
  • The olives are washed to remove leaves.
  • They are then put in a mill which crushes and grinds them into a paste.
  • A chamber holds the paste while it is gently paddled to release the oil molecules.
  • The olives are then pressed in either the old style or a modern centrifugal press system.
  • After pressing, the oil is decanted or separated and stored in stainless steel tanks until bottling.
  • The oil is bottled using an automated bottling and labelling line (in house).
  • In the centrifugal press, olives are crushed.  A maximum water heat of 28°C is used to assist oil extraction earning its acclaimed status of "cold pressed".  This means The Village Press olive oil retains all the nutritional values highly prized with olive oil of this calibre.
  • Every bottle is stamped with a pressing date.

my thoughts:  This is a great olive oil for drizzling over bruschetta, breads, and salads.  It has an assertive flavor adds depth to any dish.  It's great when mixed with herbs and a freshly baked loaf of bread for dipping. Add some cured meats, farmer's cheese, and a bottle of wine for one of my favorite types of meals. Oh yeah, and it was the perfect compliment to this meal of whole wheat couscous combined with hot-smoked salmon, baby kale, and za'atar.  The spicy, grassy notes were very present in each bite...especially when drizzled over the top before serving.

verdict:  Thumbs up.  I will spend money on this.

Muy Bueno Cookbook Spotlight & Cook-Off {event announcement}

Muy Bueno Cookbook Spotlight and Cook-Off (large)
I am so excited to announce that it's time for another Cookbook Spotlight & Cook-Off!  I've been so very fortunate in the past to work with generous publishers, talented authors, and amazing bloggers.  And so you know - this time around is no different!

I also love that the cookbook we will be featuring in this Spotlight is written by a wonderfully warm and generous trio of ladies who are also bloggers.  Yvette, Veronica, and Vangie are the mother-daughter(s) team behind the blog Muy Bueno Cookbook.  You may have heard of them.  Their blog celebrates their Mexican heritage with recipes passed down through the generations.  But they also put modern twists and surprises into their food and cooking to introduce new traditions into their family.  I was so excited when I laid hands on their beautiful new cookbook.  Why?  Well, one - because I hold Mexican food and culture very near and dear to my own heart (if you know me, you know why).  And, two - because the book is every bit as delicious and inviting as their blog is.  I should also mention their photographer, Jeanine Thurston, since you can't turn a page in the book without seeing a photo that makes you absolutely yearn for some good Mexican food.

Starting on September 16th and spanning a period of three weeks, 15 other bloggers will be joining me in pouring over and cooking from the Muy Bueno Cookbook.  This would not be possible without the generosity of their publisher, Hippocrene, who has provided all of the participants with a copy of this book (and they're also giving us some books to give to you - so watch for that).

I hope you're as excited as we are to get a glimpse into the Muy Bueno Cookbook!  Please check back here throughout the Spotlight (you can always find your way back here by clicking on the badge in my sidebar) to find links to the recipes we've made and shared on our blogs...for individual cookbook reviews...and for you chance to win your very own copy of this book.

Mexican (& Mexican-inspired) Breakfasts {#blogbreakfastclub roundup}

So you say it's breakfast time?  And you are in the mood for a little Mexican food?  Or maybe just something along those lines?  Well, look no further!  Last month I had the pleasure of hosting Breakfast Club, an event created by Helen of Fuss Free Flavours .  As the host, I was able to pick the theme, and since I'm almost ALWAYS craving them, you can bet that Mexican (& Mexican-inspired) breakfasts were my choice for the month.

So to inspire you to head into the kitchen with a little south-of-the-border flair, I bring you all of the mouthwatering recipes submitted this month.

First up, Karen from Karen's Kitchen Stories combined tortillas, eggs, poblanos, chorizo, cheese and so much more to make this mouthwatering Mexican Breakfast Casserole.  Seriously, just looking at it makes my mouth water.  I'll be making it sooner rather than later.

And then Jessica from Tejana Made decided to tickle a craving that I have had for at least two or three months with her absolutely amazing looking Machacado con Huevo.  I should probably tell you that I made it the very next morning.  And I couldn't be bothered to take pictures because I needed it my belly.  Next time.

Now we have two more of my favorite things to start the day with from Katie at Mexican Wildflower.  She brought (my all-time fave) Chilaquiles and Huevos Divociados.  I'm not sure what she's trying to do to me, but salsa-softened tortillas and eggs smothered in two types of salsa really gets me excited.  Just sayin'.

For my first submission this month, I decided to try yet another dish from a book that I currently can't get enough of.  Roasted poblanos and mushrooms topped with a golden yolk and ooey-gooey cheese...oh yeah.   I (Heather from girlichef) just had to bring these Poblano & Mushroom Baked Eggs.  It won't be my last time making them.

So.  Sunnyside up or scrambled?  What's that you say...both!?  Yeah, me too.  But no matter which version you choose, it's guaranteed to be tasty if you spice it up with a little Mexican flair and serve it inside of bright, beautiful pepper rings atop a bed of spiced onion like Karen from Lavender and Lovage did with her Mexican Breakfast Eggs - Two Ways!

Does anyone else wish that they could wake up to a cast-iron skillet filled with golden chunks of potato and the seductive heat of hatch chiles?  Come on, I know it's not just me.  I know Vianney from Sweet Life would share her Hatch Chile Breakfast Potatoes if I asked nicely.  And Vianney - one egg, over-easy and salsa, por favor!

Sometimes, you wake up with a sweet tooth.  Well, sometimes I wake up with a sweet tooth.  And I'm guessing that this delectable Mexican Chocolate French Toast from Chica Chocolatina would cradle that sweet tooth like a baby and make it feel loved.  Who doesn't want to start their day with a little chocolate and cinnamon now and then?

Katie from Mexican Wildflower is back (as if her other dishes didn't make me hungry enough) and this time she shared a protein-packed way to start the day with her Refried Black Beans.  We often start our day with a side of beans in my house...and I think a scoop of these would put a smile on my family's faces.

Another way that I love to start any day is with a plate of Migas.  Well, Claire from Chez Cayenne brought a beautiful plate of Tofu Migas to the table this month...and I just KNOW that I NEED to try them for myself.   What an awesome recipe to have in your arsenal for your vegan friends and family...or just when the mood strikes!

Let's bring this utterly fabulous Mexican (& Mexican-inspired) breakfast buffet to a close with another personal favorite (and a quickie) from my (Heather from girlichef) kitchen, Huevos Rancheros.  Tortillas, eggs, your favorite salsa, and some queso fresco.  That's pretty much my idea of happiness.

Muchas gracias to all of the amazing ladies that helped fill up my breakfast table during the month of August with their amazing dishes.  All that's left to do now is fill up my plate!

Roasted Potato & Corn Salad w/ Bacon

Okay.  I've got a confession to make.  When my head is all a-buzz with crazy activity and I can't calm it to think...when I stare blankly at the screen for blocks of time on end...when the words won't form stories...I break out in poem.  Usually a haiku.  Sometimes several haikus.

Charcoal fades to gray
We commune around the grill
Summers last hurrah

Mmm hmm. That's my secret. That was my secret.

Autumn closing in
Sizzling brats and cold beer
Potato Salad
If you give this insanely delicious potato salad a try, you too, may resort to poetry instead of conversation.

Bright sunny bursts of sweet corn

Roasted Corn & Potato Salad w/ Bacon

by Heather Schmitt-González
Prep Time: 20-30 minutes
Cook Time: 1½ hours
Keywords: roast salad side bacon corn potatoes July 4th Labor Day Memorial Day American summer

Ingredients (serves 6-8)
  • 12 oz. bacon, cut into ¼" strips (short way)
  • 2 lbs. red potatoes (or Yukon Gold), cut into ½-1" chunks
  • 3 large ears sweet corn, husked & broken in half
  • ~⅓ c. reserved bacon grease
  • salt
  • freshly ground black pepper
  • ½ tsp. garlic powder
  • 1½ tsp. dried oregano + more to finish
  • 1 Poblano chile, roasted, stemmed, seeded, & diced
  • 4-6 green onions, chopped
  • ¼ c. mayonnaise
  • ¼ c. sour cream
  • ½ - 1 c. shredded sharp cheddar cheese
Instructions
Preheat oven to 425° F.

Cook bacon in a small skillet until it is just past the floppy stage and starting to crisp. The timing on this really depends on the size pan that you use. I like to use a small one (8") even for this amount of bacon. As the bacon releases its fat, the small surface area of the pan causes the rendered fat to basically deep-fry the bacon and help to cook it evenly. This takes me ~20 minutes over low heat.

Scoop bacon out with a slotted spoon and set on a paper towel-lined plate, leaving as much of the fat as possible behind. Reserve bacon. Measure out ~⅓ cup of the rendered bacon grease.
In a large bowl, toss the potatoes and corn with the bacon grease, a sprinkling of salt and pepper, and the garlic powder and oregano. Dump the whole lot out onto a half sheet pan. Slide into oven and roast for 45 minutes to 1 hour, stirring and moving around the veggies every 20 minutes or so. Remove corn after ~30 minutes and set aside. Potatoes should be tender and have golden edges and sides here and there. Remove and allow to cool to room temperature.

In a large bowl, whisk together the mayonnaise and sour cream. Cut the corn from the cobs and add it to the bowl along with the cooled potatoes, poblanos, green onions, and cheese. Toss well, but gently, to coat. Gently fold in the reserved bacon. Taste and adjust seasoning, as needed. Crumble a small palmful of dried oregano over the dish.

Serve and enjoy this highly addictive potato salad.

    BYOB - #BakeYourOwnBread (Sept. '12)

Uuummmm...WHERE DID AUGUST GO!?  Seriously, that was the fastest month on record.  I feel like I was just sitting in this exact spot typing up a similar post just a few days ago.  I want to thank all the amazing home bread bakers that joined us in filling up our August #BakeYourOwnBread basket high and proud during that whirlwind of a month.  There are so many amazing breads and rolls that I want to try.  I'm sure my actual baking will never catch up with my dream-land baking...but I'm definitely going to have fun giving it a go!

Our Featured Bread Blog from last month, Hefe und mehr, is written by an extremely talented bread baker named Stefanie.  And surprise, surprise, I had the hardest time narrowing down all of the recipes that I wanted to make into one recipe that I had the time to make.  Oh, but it was a goodie.  And one I will make often.  Or be driven crazy by the begging for more.  Remember, our featured bread blog is optional...but if you get a chance, I hope you'll join us.  It's always fun delving into another blogger's archives to draw inspiration.   And every blog we feature is packed with a variety of bread recipes!

For more info on the BYOB-FBB and to find out September's featured bread blog scroll down below the linky.

Until then, let's take a look at the bread that was baked from Hefe und mehr during August.
    1. Connie from My Discovery of Bread baked some Flaxseed Triangles (inspired by this post).
    2. Karen from Karen's Kitchen Stories baked beautiful Pain de Beaucaire loaves (inspired by this post).
    3. Joyce from Kitchen Flavours baked these lovely Yoghurt Sesame Rolls (inspired by this post).
    4. Heather (me) from girlichef found a new favorite in the two-toned Cocoa Rolls (inspired by this post).

And now, I look forward to everybody joining us and helping us to fill up our September bread basket.

    How to participate (the rules):
1.) Blog about bread.  It can be a post about baking bread in any form (yeast, wild yeast, quick breads, flat breads, sweet, savory, loaves, rolls, breadsticks, tortillas, scones, biscuits, crackers, etc.).  It could also be a recipe that uses bread in it or as a base (pizza, bread pudding, sandwiches, etc.).  Or it could be an informative post, a tutorial or how-to post (such as how to make sourdough, bread baking essentials, favorite products for baking bread, etc.).  It could be a review of a book or cookbook having to do with bread.  It could be a photo-only post (bread festival, bakery tour, etc.).  Anything that inspires us to bake bread at home.

2.) Include a link back to this post or any of the monthly link-up posts (link in my sidebar or at the bottom) OR link to one of the other hosts.  As long as there is a link that leads people back to BYOB.  You can use a text link or the BYOB button.
