This whole popsicles-for-breakfast thing?  It's really growing on me.

And this is another one of those combos that seems custom-made for a morning ritual.  When I'm in a hurry, one of my favorite things to grab is Greek yogurt with a drizzle of honey and maybe some fruit or berries if I have some.  This pop has all of that glory, but it's pre-stirred.  Plus, it's portable.

And since the end of this school year is a mere four days away, I'm thinking this is the perfect time to discover these babies.  No more rigorous 6 a.m. breakfasts for the wee ones.  I'm thinking the average breakfast will fall somewhere between 8 and 9 o'clock now.  Aaaah yes, summer sleep schedule.

Except of course for my oldest.  He does the whole teenagers-sleep-'til-noon thing if at all possible.  He believes it's not just his right, but his duty.

Even better.  The sun's already beating down hard at that point.  No stovetops turned on and bringing the kitchen to an unbearable state.  Nope.  Instead I will point him to the freezer for his breakfast.

Now, if I can only figure out a tasty way to get oatmeal on a stick.  All frozen-like.

Greek yogurt sweetened with a touch of honey and studded with ripe berries, then frozen into popsicles.

Yogurt Ice Pops w/ Berries (Paletas de Yogurt con Moras)

Ingredients (10-14 popsicles)
  • 1 lemon (peel only)
  • 1/2 cup water
  • 1/2 cup sugar
  • 1 1/2 cups plain Greek yogurt
  • 2 tablespoons honey
  • 2 cups fresh blackberries (or any type of berry)
  • powdered sugar
Cut the peel from a lemon using a knife or vegetable peeler, cutting only the colored part and leaving the white part (pith) behind. Combine water and sugar with lemon peel in a small pan over medium-high heat until the mixture comes to a boil. Stir to dissolve sugar, then lower heat and let simmer for 5 minutes. Cool to room temperature and strain. Refrigerate until chilled.

Put the chilled syrup in the jar of a blender along with the yogurt and honey. Blend until smooth. Pour the mixture in popsicle molds, ~⅔ - ¾ of the way full.

Rinse out blender jar and then put the berries and a touch of powdered sugar in it (just enough to add a hint of sweetness - more or less depending on the sweetness of your berries). Pulse until you have an almost smooth mixture, with just a few chunks.

Divide berry puree among molds. Use a thin-bladed knife to push the berry mixture down and through the yogurt mixture and swirl it around a bit.

Freeze popsicles until firm, adding popsicle sticks at the correct time for your mold.

You can also use whole berries in place of the berry puree, if you wish. I prefer the flavor and texture of the blended mixture.
