Chewy Oatmeal Cookies with Apples, Pecans, and Cinnamon Chips

Some people HATE nuts and fruits and oats in their cookies.  I mean there's even groups on facebook named something like...'Get out of my cookie, damn nuts!' or 'Stay out of my cookie, you nasty raisins!'...and more of the like.  Well, I am NOT a member of any of those groups.  I'll gather up all of those members flavors and textures and colors and throw them ALL in my cookies, thank you very kindly.  'Get in my cookie nuts/raisins/fruit/oats/variety !'  Yes, that's it today.  Just some delicious chewy cookies with a gorgeous golden thin outer crust for your chewing pleasure....

Chewy Oatmeal Cookies with Apples, Pecans, and Cinnamon Chips

yield: ~4 dozen

1 c. unsalted butter, room temp.
3/4 brown sugar, packed
1/3 c. sugar
2 eggs
1 tsp. vanilla
1 Tbs. spiced apple butter (or regular)
1½ c. ap flour
1 tsp. baking soda
2 big pinches fine sea salt
2 1/3 c. rolled oats
½ c. toasted pecans, chopped
½ c. dried apples, chopped
1 c. cinnamon chips

 Preheat oven to 350° F.  Beat butter and sugars in a large bowl until light and creamy.  Beat in eggs, vanilla, and apple butter.  Gradually beat in the flour and salt.  Fold in the oats, pecans, apples, and cinnamon chips. 

Drop by rounded tablespoons onto a lined cookie sheet.  Bake for 12-14  minutes, or until golden.  Cool on tray for a minute or so, then remove to a wire rack to finish cooling.

  8. Oh yum Heather, they look scrumptious. What I like in my cookie depends on the cookie (if that makes any sense). We don't get cinnamon chips up here, BUT I'm headed to the States this weekend so you can bet I'll be looking for them at the nearest grocery store and stocking up.

  10. I'm with you, I love all the nuts and berries in my cookies! Honestly, I'll probably eat just about any cookie put in front of me. I can't think of one that I don't like. Yours look divine!

  13. *sniff sniff* I can only adore your sweets from afar now...just found out my sugar levels are off the chart, so now I am on a diabetic diet, and oatmeal cookies ARE my favorite! Good with cherries too!

  15. I hate raisins in cookies - they deceptively look like chocolate chips sometimes! Plus I don't really like raisins.
    These look delicious - I've never heard of cinnamon chips, but I've got to buy some now! ;)

  17. I'm actually not the biggest fan of nuts in my baked goods or in my ice cream...but raisins and chocolate chips I can get behind! These sound awesome!

  26. These cookies look scrumptious! I love all of the chunky bits in them. I have to draw the line at raisins though. I love the flavor of them but I just don't like to bite into them in my cookies. I'm a little weird that way.

  28. I am totally with you on that..i like me cookies with nuts n definitely want them chewy..I CAN NOT stand a crunchy cookie..some of the local stores here have my kind of chewy oatmeal cookies but this one with all the nuts n apples looks a hundred thousand times better!!

  34. Heather, I know what hubby is going to bake us tonight! THESE COOKIES! Just the other night I asked him to bake up a batch of his best snickerdoodles, but now that I've shown him your post and photo, we're off to find cinnamon chips, since we have everything in the pantry but these! THANK YOU so MUCH for posting these to my Friday get-together. I'm sorry that i missed your Tuesday hop, but won't forget next week. I am truly an absent minded professor with a very cluttered head!   36. Your cookies look delish and filled with just the right amount of extras. I live with a houseful of raisin haters. The only thing they will eat in cookies are chocolate chips....no nuts, no raisinis, no dried fruit, no coconut. Which means that every batch I make containing those dreaded items I get to eat all by myself :( LOL

  39. Heather, we're making these RIGHT NOW! Will let you know how they turn out . . . 'cept I could not find 'cinnamon chips' in my iddy-biddy town (will have to drive to Greenville tomorrow to Whole Foods or Fresh Market to find them), so instead we used toffee chips. No nuts either due to hubby's fussiness over them; but he's the baker, and I can't complain about that! This is the second recipe of yours that I've made! Voted for you!

  42. I really do hate raisins. Over time, I've come to appreciate nuts in my cookies. These look like cookies I'd eat with nuts and raisins. Gorgeous! Irresistable. Yum. =)
